CHICKEN SATAY WITH COCONUT PEANUT THAI SAUCE

 

I was on vacation in Jamaica🌍 a few weeks ago and we stayed at a fabulous resort; Secrets Wild Orchid.🌴  I was impressed with all the food that we had during our week long stay.🍴  Everything felt and tasted well made, light and never heavy or greasy if you know what I mean.  Everything looked fresh and made to order; it was delicious.  While I enjoyed Jerk Chicken and Jamaican spiced patties usually for lunch😋… in the evenings we enjoyed the fare from most of their specialty restaurants.  

After the pool bar it was up to the room to primping and get dolled up for the evening fun.👠👗  My favourite part of these vacations is suprisingly the evenings.  As much as I love the sunshine and the ocean, pool bar fun and all….  there is nothing better than getting dolled up in the carribean at a fancy shmancy resort, eating and drinking with friends that we’ve known for 8 years and that we only get to see for 1 week a year.☺️ Call Don and Laurie’s room and meet them down at the lobby bar for Pre-Cocks (pre drinks/cocktails😜, and yes non alcholic for me, 34 weeks today without a drop of booze. #noboozejustshoes)  From there we would wander down restaurant lane, a cobblestone/brick swooping pathway through the resort and along the oceanfront with a gorgeous view of the jamaican hillside in the distance.  Hubby wants to move there, just for that evening view!!  I am so game!!  

As in most of these resorts, you get to choose your style of dinner from French to Italian, steak, seafood, or Asian cuisine.  One night we chose Asian and I had a Chicken Satay dish in a delectable peanut sauce, and I vowed to make this as soon as I got home.  And I did… and the recipe is below, but first, a few pics of Jamaica to share with you😘         

And now let’s get back to cooking shall we😜

MARINADE

1/2 CUP COCONUT MILK

1 CLOVE MINCED GARLIC

1 TEASPOON CURRY POWDER

1 1/2 TEASPOONS BROWN SUGAR

1/2 TEASPOON SALT

1/2 TEASPOON BLACK PEPPER

1/2 TEASPOON CHILI PEPPER FLAKE (OPTIONAL)

4 CHICKEN BREASTS (boneless & skinless, cut in 1 inch strips)

DIRECTIONS

1. Stir together the first 6 or 7 ingredients until the brown sugar has dissolved. (chili pepper flakes are optional)

2. Pour over chicken breasts in a sealable container

3. Marinate the chicken in the fridge for 4 or more hours

COCONUT PEANUT THAI SAUCE

1 CUP COCONUT MILK

1 TABLESPOON CURRY POWDER

1/2 CUP CREAMY PEANUT BUTTER

3/4 CUP CHICKEN STOCK

1/4 CUP BROWN SUGAR

1/2 TEASPOON CHILI PEPPER FLAKE (OPTIONAL)

2 TABLESPOONS LIME JUICE

1 TEASPOON SOY SAUCE

SALT TO TASTE

10 (6 INCH) WOODEN SKEWERS (soak them in water for a few hours before cooking, this will keep them from burning when on the grill.)

GARNISH

CHOPPED SALTED PEANUTS

THINLY SLICED GREEN ONIONS 

DIRECTIONS

1. Turn on your bbq or grill for medium-high heat.

2. Bring coconut milk, currey powder, peanut butter, chicken stock, brown sugar and optional chili pepper flake to a simmer in a saucepan over medium-high heat.

3. Simmer and stir constantly until it’s thickend up and smooth.

4. Remove from heat and stir in lime juice and the soy sauce.

5. Season to taste with salt

6.  Skewer marinated chicken slices onto presoaked, 6 inch, wooden skewers

7. Grill each skewer for about 4-5 minutes on each side or until cooked through.

8. Drizzle with some of the warm Coconut Peanut Thai Sauce, reserve the rest for dipping.

9. Garnish with chopped peanuts and sliced green onions

Goodbye Summer Hello Autumn – Welcome Back Everyone

Wowowowow it’s been a long time! Hello Everyone, I hope you are doing well. It seems as tho I took the summer off and then some. I apologize for that but I’m sure you all have some really good bloggers out there to keep you company. 😊

So now since it’s been just over 2.5 months since my last entry I should probably fill you in quickly on my summer. Then you can leave me a comment letting me know about yours! That would be fun right?

So where to begin?

July
Hubs was in whistler for a Stag and I nearly didn’t survive the weekend alone but I did thanks to GalPal Amberina. WE enjoyed some good food, good drinks, some good entertainment, lots of sun, did I mention drinks oh and the laughs! Oh my god the laughs! So many good laughs. Love it! Thanks for getting me thru my separation anxiety.

We also spent a weekend camping at the lake, same spot we had 2 years ago, private and awesome with a great view. Not without some trouble tho, just about got jumped by 3 tweaked out crack heads, then visited by the PoPo who wanted to take a look at Hubs’ guns and I don’t mean his muscles. Hey Hubs, next time be sure to have the safety on when u hand them your loaded shotgun aight!

Seattle!!!! We went down for a weekend to watch another UFC and sadly the prelims were better than the main cards, oh well some rum, lots of walking, Pike Place Market, the parade, the pier and good times in our room!

We were lucky enough to watch 2 friends get married on a beautiful day with a beautiful night to follow. That was a lot of fun.

Dinner with some friends for Hubby’s birthday.

Then a whirl wind trip to Alberta for my cousins wedding! It too was a gorgeous wedding and HOT! Oh so hot! It was great to hang with the family and visit with the family I rarely see. Will remember it forever! Wouldn’t have been complete without a fire alarm pull at 1am the night before the big day! Oh and Hubby’s dance removes with my Auntie *smacks forehead with hand*

House renos! So upstairs is completely dry walled and it’s been primed and sanded and primed and sanded. Can’t wait for what comes next

September
Again with the renos. Hubby and I selected paint colours and in no time and all 2 rooms are painted and paint has gone up in the foyer. The foyer has only been started as there was a small accident with a ladder and a freshly dry walled, primed ready to go wall. Just thankful everyone is ok and that it can be fixed. Hehehe. We will not speak of this incident agin. I promise dear. Oh and crown moulding and all our trims have been picked out. Eeeeeeek!

Jones Family Camping trip. Another whirl wind trip to the Okanagan (did I spell that right?). We met up with the rest of the clan for some fun in the sun on the lake. The only major incident was Hubster taking a fall the first night over and around an unused metal fire pit. It was dark ok! And we only drank a little wee bit of rum. It definitely needed and still does need stitches but he calls himself the wolverine and this he heals rapidly fast! LOL. did u just blow a gasket laughing at that comment? Because I do everytime he says it and only because he actually believes it!

5 Year Wedding Anniversary in Las Vegas

This year we celebrated our 5 Year Wedding Anniversary in style and this is how it started….

We were cuddling watching TV one night about a week before our 5 year wedding anniversary when he got up and came right back with the envelope…. “To my Wife”

I thought, “how sweet”  but he’s so early… did he get the day wrong?

“Open it” he says and so I do.

the inside was filled, top to bottom, side to side with the nicest words in the world.  I cried.  It also had a little note in it that said to “pack a bag because we are headed somewhere very hot next weekend.  The initials are PH.  It took me a few minutes to put it all together…. Planet Hollywood Resort in Las Vegas.  OMG excited doesn’t even begin to explain it!

Friday couldn’t come soon enough.  Our flight was to leave at 10am friday morning and we completely overlooked traffic and were less than 1 minute away from missing the flight.  They actually didn’t know if we were going to make it on.  Thankfully…. we did!  And we will not push it that late ever again!!  I watched one plane take off for Vegas that I was supposed to be on once before and I’ll be damned if it was to happen again.

10am and we are on the plane…. drinks on the plane… Rum Rum Rum…. YUM YUM YUM

We were happy being in the first row…. we were the last to get on and the first to get off!  PERFECT.  The flight attendants thought we were on our honeymoon because we looked so in love.  So funny and so cute!

We’d been to Vegas before in October but never in the summer.  We were slightly nervous about how hot it was really going to be….  105, 106, 108, and 107 were the temps for the next 4 days!!  I couldn’t even begin to imagine what it was about to feel like….  LIKE A BLOODY HAIR DRYER BLOWING ON YOU FROM EVERY ANGLE.  HOT AS HELL.  But the best part…. no humidity…. which means… you guessed it… no hair frizz.  I was certainly pleased!  The heat was absolutely amazing and we will definitely be going back in the summer months again.  It did not bother us at all!  In fact we loved it.  Even at night it was hotter than any day in the Caribbean….. ahhh I’m actually cold sitting here back home…

We get to our room at Planet Hollywood Resort and Casino…. and get upgraded twice to a Fountain View room and the view was spectacular!  Although the windows needed to be cleaned in a bad way…. we mentioned it upon checkout and were given a substantial refund!  Again… pleased!
